`THANK’ `YA’ `LAWD’…

`FA’ GIVIN’  US  `DIS’

WILD TURKEY!

*10 lb. turkey or larger

1-2 large onions, chopped

2-3 bunches of green onions

10-12 garlic (5-6 tsp. of minced)

5-6 bay leaves

1-2 lbs. of sliced fresh mushrooms

1 stalk of celery, chopped (all of it)

½ cup Wild Turkey

3-4 tbsp. of Louisiana Black Cane Syrup

2-3 tsp. Soumas Creole Soul Seasoning

1-2 sticks of butter

1 orange, sliced in rings

1 apple, cored, seeded and chopped

Have turkey thawed, washed and dried. In a separate saucepan, bring to a low simmer, Wild Turkey, syrup, and ½ of the butter for 15-20 minutes.  Slitting the turkey in various spots on the top, stuff in your whole garlic and bay leaf here and there (no need to put a bay leaf in all holes). Generously season the turkey both inside and out, then put your onions, green onions, celery, apple pieces, mushrooms and the rest of the bay leaves inside and outside of turkey. Place orange rings on top of turkey (use toothpicks to hold rings while baking). Brush on wild turkey mixture generously over and around the turkey.

Bake turkey in a 300-375 degree oven for about 4-6 hours, depending on poundage and weight per directions. Baste every hour with remaining mixture and/ or pan drippings.

*When your turkey is done…remove all the inside seasonings, put in a food processor, then save and mix this in your `dressin’!….Thank `ya `Lawd!
